Do we have to go full remote?

No. Hybrid is the normal case. We make the remote path as supportable as the office path so you are not running two standards.

Is a VPN enough?

A VPN is a tunnel, not a program. Identity, patching, backup, and device health still decide whether that tunnel is a good idea.
